Elia Carceller Sauras

Elia Carceller Sauras is founder and director of the Instituto Mediterráneo de Alimentación Sostenible – IMAS, a think tank dedicated to designing sustainable, healthy and economically viable food models for collective and professional kitchens. Her work focuses on the transformation of food systems through public health, environmental sustainability, social responsibility, territorial identity and operational efficiency. Trained in agricultural engineering, environmental sciences and agri-food policy, Elia has worked internationally across Spain, Germany and the United States in consultancy, environmental auditing, sustainable tourism and food education. For more than seven years, she coordinated educational projects at Slow Food Germany, designing and managing national and international initiatives on sustainable production, responsible consumption, animal welfare and food culture.

She currently combines her professional work with doctoral research at Martin Luther University Halle-Wittenberg in Germany, where she studies new discourses in agri-food policy, with particular attention to food as a commons. Through IMAS, she supports hotels, restaurants, schools, public administrations and community food projects in areas such as sustainable purchasing, menu design, waste reduction, staff training and sustainability communication. Her approach brings together technical rigour, Mediterranean food culture and a practical understanding of how kitchens operate in real life.
